As part of Zero Gathering, the discussion session “From Tradition to Future: Culinary Art and Culture” was held under the moderation of Assoc. Prof. Dr. Ebru Nalan Sülün. The event featured a diverse panel of speakers, including TUNCA, who shared insights from his journey in building a gastronomic culture in Ayvalık, Hülya Koloğlu, Ümit Hamlacıbaşı, and Yahya Göztepe, who explored the past, present, and future of Bozcaada’s culinary heritage.

The discussion focused on the cultural history of culinary arts, Bozcaada’s unique gastronomy recipes, and why these traditional dishes have largely disappeared from modern restaurant menus. The panel also examined public perspectives on this culinary shift.

The session delved into how Bozcaada’s gastronomic traditions can be revitalized and incorporated into contemporary restaurant menus. Speakers discussed the steps needed to preserve and revive the island’s food culture, emphasizing sustainability and community involvement.

Additionally, the conversation addressed the challenges of tourism in Bozcaada and explored how a culinary-focused approach could positively transform the tourism landscape, making it more culturally rich and sustainable. Participants highlighted the importance of gastronomy as a tool to enhance Bozcaada’s tourism industry while maintaining its authenticity and heritage.
